River’s Edge is a quiet, family-friendly campground in Eastern NC, located on the Bay River between Bayboro NC and Vandemere, NC. With over 700 feet of waterfront, two fishing piers, and a boat ramp, Rivers Edge Family Campground offers campers the availability to enjoy Bay River’s beauty and bounty from the shoreline or by boat, kayak, canoe or whatever water toy you choose. At River’s Edge, we are truly a family campground: You may come as a stranger, but you will leave as family!
If you like to fish, then River’s Edge is the perfect spot for you. Our piers offer prime fishing spots so you can catch some delicious dinner for you and your family. There are a number of species of fish commonly caught from the Bay River, including Speckled Trout, Red Drum, Flounder, Black Drum, Croaker, Spot, Bluefish, Spanish Mackeral, Pinfish, and Blue Crab.
So, since our campsite offers access to such delicious fish, we thought we’d share a few of our favorite fish recipes with you:
- Flounder is a versatile fish that tastes great baked, broiled, fried, or grilled. If you want to mix it up and add some spice and flavor to your Flounder recipe, you should try grilled Flounder tacos. To cook the Flounder, brush it with some olive oil and some of your favorite spices (we suggest garlic, salt, pepper, onion powder, and paprika). When it’s done cooking, add some fresh lime juice on top for a bright citrus flavor. For extra flavor, you can fill your taco with homemade slaw, fresh mangos or pineapples, some shredded cheese, or a spoon of sour cream– the options are endless.
- Another favorite of ours is Blue Crabs, and you can’t go wrong with a steamed Blue Crab. After you thoroughly clean your crabs, you’ll want to drop them into your steamer. We like to season the water with Old Bay for extra flavor. You’ll steam them for about 20-30 minutes, or until the shell is completely orange. Once the crab is done, melt some butter and get some fresh lemon slices, and enjoy!
